Yet another Itinerary Question!

Have gained a lot of information so far on here and hoping to finalise my plan very soon.

Myself and my wife will be in South Africa from March 16-April 1. We’re staying in Cape Town until the 20th. Plan is then:

20th – Hire Car in CT then spend 2 nights in Stellenbosch followed by 1 night in Franschhoek and a trip on the wine tram

23rd – Drive to Oudtshoorn and spend 2 nights there, we like the idea of the downhill cycle run by the Backpackers there…

25th – Drive to Wilderness and stay at Cinnamon and chill for a few nights – with trips to Knysna, Plett and Storm River

28th – We’re going to Quatermains Safari on 29th and don’t want to leave ourselves a long drive on the morning of the 29th so thinking somewhere like Jeffrey’s Bay but open to anywhere that would be within a 2 hour drive of Quatermains. Hoping to be able to book Fynboshoek for lunch that day.

29-31 – Quatermains

31 – Fly PE to CPT stay overnight, fly home to Ireland on April 1st.

We like great food, wine, scenery and some walks and cycling and a swim in the sea would be nice too.

I realise we’re missing out on Hermanus and lots of other great places but we may have to save them for our next visit. Any changes people would recommend? We were originally going to stay in Knysna but a colleague who was there reckoned Wilderness had a bit more about it.
